Cucumber, Avo & Feta Salad

A cool, fresh salad of cucumber, creamy avocado, crumbled feta and red onion with a light lemon-honey dressing — the perfect counterpoint to the fire and richness of a braai spread.
Ingredients

Salad
- 1 large cucumber, sliced into half-moons
- 2 ripe avocados, cubed
- 200 g feta, crumbled
- 1 small red onion, finely sliced
- 1 handful fresh mint or coriander leaves
Dressing
- 45 ml extra virgin olive oil
- 15 ml lemon juice
- 5 ml honey
- salt and black pepper to taste
Instructions

Whisk the olive oil, lemon juice, honey, salt and pepper together in a small jar.

Layer the cucumber, avo, red onion and feta in a wide salad bowl.

Scatter over the mint or coriander.

Pour the dressing over only when ready to serve - avo bruises and feta gets soggy if dressed too early.

Toss gently at the table.
Notes & Tips
Extra bite & garnish
For more bite, add thinly sliced radish or a handful of pomegranate seeds. Feta and pomegranate is a proper Cape combination.
