Harissa Yoghurt

Cool, creamy, spicy. One spoon on the side of every plate. Two minutes to make, ties the whole feast together.

- 250 g thick Greek yoghurt
- 10 ml harissa paste
- 1 squeeze lemon juice
- 1 pinch salt
- 1 drizzle olive oil, for the top

Spoon yoghurt into a bowl.

Add harissa, lemon and salt. Swirl gently with a spoon — don't fully mix. Leave streaks of red running through the white.

Drizzle olive oil over the top. Serve.
Notes & Tips
Choosing harissa paste
Buy a good harissa paste — the cheap stuff is just chilli sauce. Look for one with rose petals or preserved lemon in the ingredients list. It makes a difference you can taste.
