Herbed Yoghurt

The glue of the platter. Goes on everything — chickpeas, chicken, halloumi, straight on the flatbread. Make it first, let the flavours marry.
Ingredients

- 250 g thick Greek yoghurt
- 1 clove garlic, grated
- ½ lemon, juiced
- 30 ml olive oil
- 1 small handful mint, finely chopped
- 1 small handful flat-leaf parsley, finely chopped
- salt

Stir everything together in a bowl.

Taste for salt and lemon — it should taste bright but not sharp.

Rest 10 min for the garlic to soften. Stir again before serving.
