- 4 garlic cloves
- 1 red pepper (deseeded)
- 60 ml olive oil
- 60 ml red wine vinegar
- 30 ml lemon juice
- 10 ml smoked paprika
- 5 ml oregano
- 5 ml salt
- 2½ ml black pepper

Char the red pepper and chillies under the grill or over a flame till blistered (approx 5 min). Cool slightly.

Blitz everything in a blender till smooth-ish — keep some texture.
