Smooth, stiff maize meal pap — the essential braai partner, cooked low and slow until it pulls away from the sides of the pot and holds its shape.

  • 500 g maize meal (mielie meal)
  • 1¼ L water
  • 10 ml salt
  • 30 ml butter (optional, stirred in at the end)

Instructions

    Bring the water and salt to a rolling boil in a heavy-based pot.

    Reduce the heat to medium. Slowly sprinkle the maize meal into the boiling water while stirring continuously with a wooden spoon - this stops lumps forming.

    Once all the maize meal is in and the mixture is smooth, reduce heat to very low.

    Cover with a tight-fitting lid and cook for 30 to 40 minutes, lifting the lid to stir every 8 to 10 minutes to keep it smooth and stop the bottom catching.

    The pap is ready when it pulls away from the sides of the pot and holds its shape on the spoon.

    Stir through the butter if using, and serve hot in a mound with the tomato sous over the top.

Notes & Tips

Pot choice & lumps

A heavy-based pot is essential - thin pots scorch the bottom. If lumps do form, beat them out with a wooden spoon while the pap is still hot.
