Geelrys (Yellow Rice)

Traditional South African yellow rice fragrant with turmeric and cinnamon — the essential accompaniment to bobotie.

- 250 g basmati or long grain white rice
- 750 ml water
- 5 ml turmeric
- 1 stick cinnamon
- 30 g butter
- 5 ml salt
- 30 g sugar (optional, traditional)
Instructions

Rinse the rice under cold water until it runs clear.

Bring water, turmeric, cinnamon, butter, salt and sugar to a boil in a pot.

Add the rice, stir once, reduce heat to low, cover tightly.

Simmer 15 minutes without lifting the lid.

Remove from heat, leave covered another 5 minutes. Fluff with a fork. Remove cinnamon stick.
